Creamy Avocado Gnocchi with Bacon and Paprika

Mozzarella & Tomato Stuffed Potato Gnocchi

INGREDIENTS

  • 1 package of Patarò mozzarella and tomato stuffed gnocchi

  • 2 ripe avocados

  • 4 slices bacon

  • 16 basil leaves

  • 2 tablespoons lemon juice

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • 2 tablespoons olive oil

  • 1 clove of garlic

  • 1 teaspoon paprika

PREPARATION:

Put the avocado pulp, basil leaves, 2 tbsp olive oil, lemon juice, garlic, salt and pepper in a food processor and blend until completely smooth. Taste and season with salt and pepper if necessary.

 

In a small skillet, cook the bacon over medium-high heat for about 4-5 minutes until crisp. Remove from the pan with a slotted spoon  and drain on paper towel.

 

Bring a large pot of salted water to a boil. Add the gnocchi to the boiling water. When gnocchi floats to the top, cook for 2 minutes and remove with a slotted spoon. Add the sauce, bacon and a dusting of paprika to the drained gnocchi, mix gently and serve.
