Baked Feta and Tomato Gnocchi

INGREDIENTS

  • 1 package of Patarò mozzarella and tomato stuffed gnocchi

  • 1-1/2 cups of cherry tomatoes

  • ¼ cup of Feta cheese

  • 2 cloves of garlic

  • 2 Tbsp of extra virgin olive oil

  • 5 basil leaves

  • salt and pepper to taste

  • dried oregano

  • chili pepper

PREPARATION:

Wash the cherry tomatoes well, arrange them in a large pan, leaving a void in the center. Place feta cheese in the center surrounded by the tomatoes and add two cloves of garlic.

Season the feta cheese and tomatoes with oil, basil and a little salt and pepper to taste, then cook for 30 minutes in a preheated oven at 350F.

Once done, mash the feta, cherry tomatoes and seasonings a with a fork and mix.

In the meantime, cook the gnocchi in a pot of slightly salted boiling water, once the sauce and gnocchi are done, add the gnocchi to the feta cheese and tomato mixture and combine.
