Gnocchi with Pesto Alla Siciliana

INGREDIENTS

  • 1 package of Patarò mozzarella and tomato stuffed gnocchi

  • 1-1/2 cups of sun-dried tomatoes

  • ½ cup of chopped walnuts

  • 1 cup Parmesan cheese

  • ¼ cup of ricotta cheese

  • 3 Tbsp of extra virgin olive oil

PREPARATION:

In a blender, combine sun-dried tomatoes, walnuts, Parmesan and fresh ricotta. Begin blending adding the oil slowly.

Once you have obtained a thick cream pesto, cook the gnocchi with cheese in a large saucepan with plenty of lightly salted water.

Toss the cooked gnocchi into a serving bowl with the pesto. Serve with a drizzle of extra virgin olive oil and sprinkle Parmesan cheese to taste.
